(No, I am not magically 9 months pregnant again 🤣) This was my first ever viral recipe video and the first I really realized, maybe it is possible to pursue being a full time media dietitian and content creator! I had created content for a looooong time before this but always purely as a hobby and because I am so passionate about sharing joyful, balanced food with the world. And I’m feeling nostalgic because this year I accomplished some big things I wanted to accomplish. That I had previously told myself I didn’t have the time, knowledge or ability to do. But I pushed those fears aside and set out to crush some goals! So here I am, making chicken bacon gnocchi soup which is one of my absolute favorite soups and of COURSE I included the recipe in my brand new e-cookbook (which is one of those things I didn’t think I could do but did!) My original recipe is made on the stovetop (but in this video I’m making it in the crockpot which you can do as well). I also usually use heavy cream but ran out so a shelf stable option like evaporated milk also works! 8 slices bacon, chopped 1 small sweet onion, chopped 4 carrots, chopped 4 stalks celery, chopped 4 cloves garlic, minced 2 teaspoons poultry seasoning 1⁄2 teaspoon each salt and black pepper 1lb chicken breasts 6 cups chicken stock 1lb mini gnocchi (or if you can’t find it, regular gnocchi!
